I saw this post on Culinary in the Desert today and my mind was instantly fixated on making some sort of S’mores treat… so I searched through my blogs and I found this super simple recipe on Bunsinmyoven.com and decided to go for it.
End result: These cookies are delicious and SO worth the 2 hours it took me to prep, bake, photograph and EAT THEM! (And yes co-workers I will be bringing these to work tomorrow for you to enjoy.)
Directions with photos:
Step 1: Gather up all of my ingredients and heat the oven to 375
Step 2: Cream softened butter and white and brown sugar:
Step 3: Add in your flour, graham cracker crumbs (I used a blender to turn the graham crackers into crumbs), salt and baking soda
Step 4: Mix until everything is combined. And then comes the hard part… stuffing the cookies!
You have to flatten the balls with your hand, stuff them with mini chocolate chips and marshmallows and then seal up the cookie with more dough. It gets sticky and I honestly tried a few times until I got it right! My cookies were shaped more like golf balls than cookies…
Step 5: Layer the cookies out on a baking sheet (but beware these pups like to grow a LOT in the oven, so leave plenty of room in between cookies). I only put 6-7 on a sheet at a time. Pop the trays into the oven for 8 minutes and voila: deliciousness.
The cookie itself is really sweet (the graham crackers give the cookie a unique taste). In retrospect I would have tried to add more marshmallows or chocolate chips so there is more filling. But I still totally recommend trying these. The hardest part of the recipe is putting together the cookies as sometimes the marshmallows and chocolate chips just don’t like to stay put!
- 3/4 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 cup cinnamon graham cracker crumbs (Koko hint: Make the crackers into crumbs in the blender, no need to whip out the Cusinart!))
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups mini marshmallows
- 1 cup chocolate chips (Koko hint: I used mini chocolate chips since they were easier to handle)
Preheat oven to 375 degrees and line a baking sheet with parchment.
In the bowl of your mixer, beat together the butter and sugars until light and fluffy. Beat in the egg and vanilla until well combined.
In a separate bowl combine the flour, graham cracker crumbs, salt, and baking soda. Add to the butter mixture and mix well.
Scoop out a tablespoonful of dough and roll it into a ball and then flatten it into a disc in the palm of your hand. Place a couple of mini marshmallows and chocolate chips (or a single Hershey’s Bar piece) in the center. Roll out a second tablespoonful of dough and flatten that into a disc. Place on top of the marshmallow and chocolate filled disc of dough and seal the edges. Smoosh together to ensure everything is sealed in good. Repeat until all cookies are filled.
Bake for 8 – 10 minutes. Cookies should be lightly browned. Remove from oven and cool on a wire rack.
