Thursday’s Eats

Did I scare you yesterday when I posted all greens for lunch and then a yam for dinner? Well trust me that was an abnormal day (stress/tired/busy day/not enough time to make something bigger for dinner). So I’ll give you a taste of what a normal day is like!

Breakfast at  10:00AM was my usual oatmeal (I’m going to have to start getting more creative I know!)

Lunch -1:00PM

A piece of bolani and some garlic mint cheese and sundried tomato pesto. When my mom and I went to the Farmers’ Market this weekend there was a vendor selling Afghani food. Of course my interest was piqued and I ended up buying a package of this bolani. Bolani is a a vegan flatbread baked with a vegetable filling. The one above is filled with lentils and I also got a package of the spinach. I really enjoyed eating this – I’ve always been a fan of ethnic food, but Afghani was a first for me! (I told Quincy that it made me feel closer to him and asked if he has had any bolani. He said no, but lots of naan. I’m still pretending the answer was yes!)

Snack – 4:00PM

I had a raspberry Fage yogurt with some granola. I just discovered the raspberry flavor…very excited!

Dinner- 7:30PM

We had bronzino (pan friend and then baked in the oven), steamed green beans and tomato/cucumber/avocado salad. (Sorry I started eating before I remembered to snap a pic!)

And for dessert I had a piece of coffee cake, but I accidentally ate it before I could take a picture… whoops!

Back to posting baked goods tomorrow 🙂

    Bolani is like stuffed naan almost so hoprfully that still helps ya feel close to him 🙂
